Chimichurri
Herb sauce for meats from Argentina

- 1/2 cup olive oil extra virgin
- 1 bunch parsley finely minced
- 2 tbsp red wine vinegar
- 5 cloves garlic minced
- 2 fresh fleshy red chilies (such as very ripe jalapenos) finely chopped
- 1/2 tsp dried oregano
- salt and pepper to taste
Mix all ingredients together thoroughly in a bowl
Let sit for at least one hour before using. Use within a day or two. If refrigerating, allow to come to room temperature before using
