Jim’s Grillade Spice Mix
A French Canadian spice blend for grilled meats

- 1 Tbsp coriander seed
- 1 tsp cumin seed
- 1/2 tsp fennel seed
- 1/2 tsp mustard seed
- 1 1/2 Tbsp sweet paprika
- 2 tsp kosher salt
- 2 tsp brown sugar
- 1 1/2 tsp dried minced onion
- 1 tsp dried minced garlic
- 1 tsp herbs de provence
- 1/2 tsp dried parsley
- 1/2 tsp black pepper
Add coriander, cumin, fennel, and mustard seeds to a mortar and pestle (or a nice stone molcajete like I used)
Grind to preferred fineness. (I want my spice mix a little less coarse than the commercial example pictured above)
Add remaining ingredients and mix well.
