Jim’s Grillade Spice Mix

A French Canadian spice blend for grilled meats

Ingredients

  • 1 Tbsp coriander seed
  • 1 tsp cumin seed
  • 1/2 tsp fennel seed
  • 1/2 tsp mustard seed
  • 1 1/2 Tbsp sweet paprika
  • 2 tsp kosher salt
  • 2 tsp brown sugar
  • 1 1/2 tsp dried minced onion
  • 1 tsp dried minced garlic
  • 1 tsp herbs de provence
  • 1/2 tsp dried parsley
  • 1/2 tsp black pepper

Instructions

  • Add coriander, cumin, fennel, and mustard seeds to a mortar and pestle (or a nice stone molcajete like I used)
  • Grind to preferred fineness. (I want my spice mix a little less coarse than the commercial example pictured above)
  • Add remaining ingredients and mix well.
