Jim’s “Cajun Remoulade”
A spicy sauce for fried chicken

- 1 1/4 cups mayo
- 1/4 cup ketchup
- 1/4 cup Heinz chili sauce
- 2 tbsp Zatarain’s Creole mustard
- 2 tsp Worcestershire sauce
- 1 generous tsp Louisiana hot sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Hungarian paprika
- 1/2 tsp cayenne pepper
- 1.5 tbsp freshly grated horseradish
- 1 scallion chopped finely
- 1 small handful flat parsley leaves chopped finely
- 1 big clove garlic minced finely
- If you want the capers, chop up a tbsp or two of capers and add them as well
